The Dalmore Dominium begins as a complex assemblage of spirits selected from Dalmores finest American white oak ex-bourbon casks, making the perfect canvas from which to create this special single malt.
It is then finished in first fill Matusalem sherry casks from the renowned Gonzalez Byass bodega.
No other single malt scotch is given access to these rare and valuable casks, which have held oloroso sherry for a minimum of thirty years before they are ready to achieve the flavours their Master Distiller is seeking for this expression. The influence of the aged sherry wood creates a whisky which is rich and complex, with an elegant maturity.
Aroma: Sweet fruits, sandalwood, lemon tart, honey, caramel coffee and a hint of liquorice spice.
Palate: Sherry soaked raisins, black toffee and banana cake
Finish: Treacle Tart, Pineapple, Oxford marmalade, ginger spice and dates
